Chocolate nemesis revisited

I have been toying with adding xanthan to the eggs to strengthen the whip, really happy with the results! I did the same for some cheese soufflés the other week, like a dream.




One for the specials, using up some honeycomb parfait from a book launch fungshon.

As the book reads..
Bloo orange salad (dressed w candied rind and julienned basil (not pictured))
Basil ice cream on crumbs drizzled w basil oil
Chocolate-orange hazelnut nemesis cake dusted in salty cocoa
And finally on top candied toasted hazelnuts, cocoa dusted again!

The xanthan really helps suspend the hazelnuts in the cake during the bake!
